Pan-roasted Brussels with Bacon

Growing up, I wasn't a fan of Brussels sprouts, but my mother loved them. Yet even a younger me can't turn down these delicious pan-roasted Brussels with bacon.

Ingredients
  

  • 500 g Brussels sprouts Halved
  • 6 Rashers of Streaky Bacon Chopped
  • 50 g Butter
  • Salt / Black Pepper to taste

Method
 

  1. Add the chopped streaky bacon to a cold pan and slowly bring the heat to medium-high.
  2. Cook the bacon until it turns crispy. Set the bacon aside, but keep the rendered fat in the pan.
  3. Add butter to the pan and gently melt over medium-high heat.
  4. Add the Brussels sprouts and season with a liberal pinch of salt.
  5. Cover the pan and cook the sprouts for 10-12 minutes or until tender and charred well. Stir occasionally to ensure an even colouring.
  6. Stir the bacon through the cooked sprouts and season with black pepper. Serve Hot.
