Ingredients
  

  • 300 g of Elbow Macaroni
  • 2 Red Peppers Deseeded & Diced
  • 1 Red Onion Diced
  • 2 Celery Sticks Diced
  • 2 Carrots Peeled & Grated
  • 3 Gherkins Drained, & Diced + extra to serve
  • 1 Tsp of Salt
For the Dressing
  • 120 g Mayonnaise
  • 120 g Natural Yoghurt
  • 1 Tbsp Fresh Parsley Chopped
  • 1 Tbsp Dill. Chopped
  • 1 Clove of Garlic Minced
  • Salt / Pepper to taste

Method
 

  1. Bring a pan of water and 1 tsp salt to the boil to cook the macaroni. Cook the macaroni in the boiling water for 12-14 minutes. Drain the cooked pasta, then run under cold water until cold.
  2. To Make the dressing – Mix the mayonnaise and yoghurt in a bowl. Stir in the chopped herbs and garlic. Season to taste with salt and pepper.
  3. To make the salad – Combine the pasta with the vegetables and toss well. Dress with the dressing, and place into a serving dish. Serve with extra pickles.
