One way to enhance your favourite pasta is by adding a simple side salad. When I first started blogging, I felt compelled to create a new side salad for every dish I made. However, this easy rocket salad for pasta works perfectly and is incredibly easy to serve midweek. Peppery rocket and nutty parmesan create a light yet satisfying accompaniment.

What’s In My Easy Rocket Salad?

Rocket, also known as arugula, is a leafy green salad with a distinct peppery flavour. It adds a fresh, slightly bitter note to the salad and brings a wide range of health benefits. Low in calories, rocket is high in vitamins A, C, and K and packed with antioxidants.

When it comes to parmesan, use the best that fits your budget. Aged parmesan adds a nutty flavour and saltiness that complements the fresh rocket leaves. If you can’t find a good parmesan, most Italian hard cheeses can provide an alternative with differing flavour profiles. Don’t be afraid to experiment until you find your favourite; it’s all part of the fun!

Balsamic Vinegar – As far as vinegar goes, it can taste quite sweet. However, it’s still vinegar and can be quite tart. Like Parmesan, a good-quality balsamic can cost a few quid. Use the highest-quality balsamic vinegar you can afford, considering your budget.

Extra Virgin Olive Oil – Olvie oil adds calories, but the trade-off is a source of healthy fats and a rich mouthfeel that helps bring out the flavours of the other ingredients. It also helps sweeten the balsamic dressing and rocket. Like parmesan and balsamic vinegar, use the best-quality oil that you can find within your budget. However, ensure your olive oil is extra virgin olive oil, as it is less refined and has a stronger, cleaner flavour.

Freshly Cracked Black Pepper—Replace salt to taste with a twist of your pepper grinder until it tastes just right. You can add salt, but I feel the parmesan provides enough of a salty component. Black pepper, however, adds warmth and an extra layer of pepperiness.

What Else Could I Include?

Cherry Tomatoes – These sweet little tomatoes would add a hit of acidity, resulting in a more balanced salad

Black Olives – Black olives add elements like parmesan with a rich umami flavour.

Pine Nuts – Add a nutty flavour and a crunchy texture to the overall salad.
